Maren’s Lentil Soup

1 onion chopped

1/2 cup olive oil

2 stalks celery chopped

3 carrots, diced

2 cloves of garlic minced

1 tsp dried oregano

1 bay leaf

1tsp dried basil

2 Cups red lentils

8 cups of chicken broth or vegetable broth


In a large soup pot, heat oil over medium heat. Add onions, carrots and celery. cook and stir til onions are tender. Stir in garlic, bay leaf, oregano, and basil, cook 2 min. Stir in lentils and broth. Bring to a boil. Reduce heat and simmer 45 min to 1 hr. When ready to serve you can also toss in 1/2 cup of thinly sliced spinach. Season to taste with salt and pepper.
